“Kito Yuzu Butterfly Pea Soda”
This refreshing drink is a mix of fragrant, sour yuzu citrus grown in the Kito area of Naka town, Tokushima prefecture, and butterfly pea, a climbing plant of the legume family native to Southeast Asia that is characterized by its vivid blue color, combined with carbonation.
When butterfly pea is combined with an acidic substance, a chemical reaction occurs that turns it purple, making for a very photogenic drink.
